10's will usually be more punchy and tighter than 15's. I hear eminence are good too, you should choose the specific model depending on what freq. response you want. The sound depends also on how you make the box. If you really want a lot of midrange and not much low you could even build a sealed box of a lesser volume then recomended and it will raise the mids. Try the links i posted a little while ago under "amp building". The best speaker software i know of is "WinISD Beta" search for it and download it, you can experiment with diff. speakers in sealed or vented boxes, diff. volumes, number of speakers, etc. Its really good.
