My fretless intonation technique is adapted from what I was taught for playing upright. I play on the very tips of my fingers and as soon as my finger depresses the string I execute a very quick little vibrato ("polishing motion") and make a microadjustment to get perfectly intonated. It becomes second nature after a while and is particualrly useful for playing double stops.

Of course if your bridge is a 1/4" out of whack for one string, you are not going to be able to take up the slack unless you wiggle like fish.
