Here is what I do when I change strings.
1: remove old string.... duh!
2: install new string
..... where to cut the string? I measure the length by laying the string flat on the neck, and then cutting the end of the string approximately three inches past the tuner it attaches to...
..... most of the tuners I have experience with allow you to then put the end of the string down into the hole in the middle of the tuner, and then you wrap the string around the tuner so that the string is on the INSIDE edge of the tuning peg. Tune it up... voila!

the new metallic sound. New strings dude. They mellow out after awhile with use. What brand strings are you using? Are they Roundwounds? Half-Rounds? Different brands will have more or less of that bright metallic sound you mention.
