I think this is normal, it may just be more pronounced with the Bartolinis. My MIM Fender Jazz with the stock pickups does the same thing. When you have both pickups at the same volume level, they are balanced and fully humbucking. As you change the level of one, they lose some of their humbucking qualities, and become like two single coils. It seems like when they are equal and the magnetic fields are canceling each other (noisewise), they also lose a little volume. It may be more obvious with the Bartolinis because they have stronger magnets or something. On my Jazz it is fairly subtle, but definately there.
