Hide glue is normally used by luthiers; it's a powder that has to be dissolved and heated for use. It can be heated to release a joint for future repairs - that's why it is used. You can buy it in ready-made form in a good-sized hardware store, but it has a limited shelf life and should be fresh for best results.

That said, be sure you are confident with your own abilities to recognize if any other problems are present when you dry-fit the neck joint; it may be something that needs to be looked at by a luthier, especially if the neck angle is off.
