Maybe you need a buffering unit between the piezo and amp to get a proper impedance match. I don't know what is the input impedance of the GK though.
A small preamp such as the K&K, Fishman, etc. should suffice.
See if you can try a buffering preamp as a test.
Another thing I'm thinking of is the finish of the Velvets.
Is it round wire?
This would generate a noise that the pickup will sadly catch very much.
