If you're in the SF area, go to Greg at Best Instrument Repair in Oakland. He'll do you right. I don't believe that steel strings can ever get too old for bluegrass. Usually when I play I wan't a reall soft dead sounding thud, not a growly or metalic sound. I use guts and they are wonderfull, just be sure that you raise your bridge for more volume.
