No one would see it, so it's not the kind of modification that could diminish the value of a vintage instrument, and it would make the beast sound better, which in turn would rather increase the value of the instrument. However, I wouldn't change the control knobs nor any other "visible" part.
: : As far as the hum goes, there simply is no way around it. Keep in mind that Jazz pickups are single coils, so they are always prone to produce some 60-cycle hum unless they are both turned all the way up (which makes both pickups act like one big double coil pickup, a configurarion that is less likely to pickup hum -thus the "humbucker" name double-coils are usually given).
